Before Naboo. Before podracing. Before Hayden Christensen. Before Jar Jar. Before CGI, this is how George Lucas used to make movies.
Before things were filmed in a giant warehouse with the walls painted green, you actually had to travel to locations, and build physical models and shoot them just the right way so they looked enormous.
I guess you could say Lucas hasn’t really changed though. At the time, Star Wars was on the cutting edge of special effects, and when the new trilogy came out, it attempted to do the same thing, only the new trend was CGI instead of models. It just so happens that one system feels more authentic than the other, and so we lost the “magic” of the original trilogy. For that and other reasons (*cough* script).
