A lot of it may have to do with how well certain colors and shapes animated with the limited capabilities of the NES. The reason that Mario (or Jumpman in the DK arcade) had a hat, mustache, and overalls is because those were ways to add distinguishable features on a character who was maybe 100 pixels total. It may be that using darker colors for skin tone made it more difficult to animate these features on such simple hardware. I could be wrong, but that's my thought.
